Not gonna lie, I loves me a good cheeseburger! But if I ate burgers as often as I’d like to, not only would I be pushing maximum density, but I’d also have cholesterol much higher than I already do.
I’ve found a good easy weeknight meal doesn’t have to include a drive-thru (and the calories that go with it).
This is my favorite soup recipe given to me by one of my besties, Michelle.
I just put everything in the slow cooker, set it to 8 hours on low and it cooks until I return to the kitchen.
Ingredients:
½ pound ground beef
¾ c. onion, chopped
¾ c. carrots, shredded
¾ c. celery, diced
1 tsp. basil
1 tsp. parsley
4 tbsp. butter, divided
3 c. chicken broth
4 c. diced potatoes
¼ c. flour
8 oz. American cheese, sliced
1 ½ c. milk
¾ tsp. salt
¼ tsp. pepper
¼ c. sour cream
Directions:
Brown beef in saucepan with onion and seasonings. Put in crockpot. Add broth, butter, milk, flour, potatoes and carrots. Cook all day.
One-half hour before serving, add cheese slices and continue to heat. Fifteen minutes prior to serving, stir in sour cream.
Serve.
I like to serve with crusty garlic bread.
